what's cooking: last week's menu

I'm lucky because Wade has always been the one to do the cooking (and he's an excellent cook!), but when he's working late or we're busy trying to get the kids to sleep, dinner somehow gets forgotten, and we end up on the sofa scarfing down a bowl of cereal at 9:30. And that just won't do!

So, in my quest to eat better in '10 I decided it was high time to get in the kitchen and do some cooking! My first week was a success! Here's what I made:

Monday - Spinach & Gruyere Tart with Glazed Carrots and Broiled Pineapple with Ice Cream for dessert
Tuesday - Chicken with Ginger & Mango with Roasted Corn and Lemon Ice-Box Cookies for dessert
Wednesday - leftovers (boring, I know, but we've gotta eat it all)
Thursday - Chickpea Curry with Mashed Potatoes
Friday - Roasted Chicken with Tuscan Bread Salad and Ricotta Cakes with Pistachios for dessert

My favorite was definitely the Chickpea Curry. It was super easy to make, and VERY full of flavor. And as you can see, my healthy eating does not mean I'm not treating myself. I figure that it's more important to add in the good-for-me stuff than to get rid of the sinful stuff.

I wish I took pictures, but I forgot. I'll try to get a couple this week.

And oh yeah, if you want any of the recipes from the dishes above let me know and I'll forward them to you.

these all sound fantastic! and complicated too... when i cook i usually just grill some meat and cook up some veggies. i'd love the chickpea curry recipe! also, i'm currently reading the lovely bones - have you read it? it's amazing, but the only problem is i can't put it down so by tomorrow i'll need something new to read!

Just had a Kit Kat bar for lunch while reading your list and feeling quite guilty. Would love to have the spinach and gruyere tart recipe if it´s not too much trouble for you!

Meg - the recipes actually only sound complicated. they're all really quite easy Believe me, I'm not about to try one that's full of 20 steps and loads of ingredients. And I did read "Lovely Bones" - quite a while ago so I don't remember it that well anymore - but I do remember that I LOVED it. Glad you're enjoying it, too!

Kifus - I'll post the recipe today so you can make your own S & G Tart!

Juju - you're too funny. The only way I'm even remotely able to get to this is because a) I've got a babysitter a few days a week and b) I picked really EASY recipes. ;)
