what's cooking: last week's menu

Another week in the books.
Do we all agree that time is moving just a bit too quickly?

Monday - Black Bean Cakes with Roasted Corn Salad and (Trader Joe's) Cornbread
Tuesday - Lemon Spaghetti with Grilled Chicken
Wednesday - Grilled Chicken Tacos with Guacamole
Thursday - leftovers
Friday - Mediterranean Pasta Salad

Favorite? Kind of hard to say... hmm... I really liked everything and nothing was such a knock-out that it stands out to me. I have to say it was a four-way tie. (I know... how very boring of me!)

That lemon spaghetti sounds so healthy. I think I will definitely be trying that pad thai recipe. I always thought of pad thai as being too complicated to make but your recipe makes it sound quite doable. Is it too late to ask for the recipe for those yummy looking Triple Chipper cookies?

Hi Meg -- not sure that you'd be fooling him. Something about the texture isn't quite right. But... don't let that keep you from making them because they are delish!
