Tuesday - Chicken with Olives and Carrots
Wednesday - Veggie Enchiladas
Thursday - Turkey & Sweet Potato Turnovers (I used ground turkey in lieu of beef)
Friday - Bruschetta Two Ways (Honeyed Ricotta with Figs and Tomato, Red Onion and Feta) and Arugula Salad (aka "the kristin salad" because I make it that much)
Favorite? Veggie Enchiladas! Bonus - the recipe makes two batches so we've got another ready and waiting in the freezer.
And I'm noticing a bit of a trend here. It seems that if I see the words "puff" or "pastry" in an ingredient list, odds are I'm going to make it. I guess puff pastry is the avocado of '10. (Don't worry, darling avocado, there's room for both of you.)

Awesome, I'm totally in for puff (or avocado!). I wanted to mention your menu last week inspired my frenzied dinner making last Sunday. I made those super easy and super tasty calzones because I needed dinner on the table within 30 minutes. It took me just slightly longer because I had a little four-year-old helper but the meal was a hit. Best of all, I got both my kids to eat spinach. Must mention hubby and I called it pizza. :-)

So yummy for Valentine's-and even easy enough for me. let us know what was cooking for V-day. we made beef bourginnouse (sp) and chocolate mousse. It only took 5 hours!
Minnie - I'm so glad you loved it! I will absolutely be making the calzones again. Couldn't be simpler, right? (And a great way to sneak in veggies!)
Elly -- your Valentine's dinner sounds amazing! Beef bourguignon... wow, quite the undertaking! But I'm sure it was mouthwateringly delicious. And we must be kindred spirits, my Dearie, because Wade is out buying the ingredients RIGHT NOW for chocolate mousses!! I kid you not. We're having croque monsieur with a side salad (or maybe potato gratin) and chocolate mousse for dessert. I'll post pictures this week!
